The cattle are raised by Ueda Livestock in Kami Town, Hyogo Prefecture.The healthy, high-quality fat and deep flavor of the red meat is said to be almost like tuna, so it is positioned as a special breed among Tajima beef and has been named "Tajima Tuna."Ueda Livestock handles all aspects of production, from breeding and fattening to sales.This time, we have prepared a female cow that has been fattened for a longer period than usual and has been biologically aged, which is considered a ``special Tajima Gen'' among Tajima Gen.
